How Do Crystals Affect the Texture of Wines?

Crystals do not change the texture of the wine in the bottle — Aum Cellars is explicit about that — and they do change the texture of the hour in which you taste. Pete Hoffmann sets selected stones among the Coombsville vines and in handcrafted leather wraps at the glass so the pour becomes a pause. Visit and you will meet clear quartz, labradorite, and black tourmaline as part of the estate’s ritual, not as a cellar additive.

What the estate actually says

The story page is careful. Crystals are symbols of balance, abundance, protection, grounding, and connection. They are placed in the vineyard on purpose. At tasting, each stone is chosen to sit beside a wine’s personality — bold and grounding, expressive, or elegant. “The idea isn’t that a crystal changes what is in the bottle. It changes the way we approach the moment.” Texture, then, is attended to: you notice viscosity, tannin, heat, and finish because you have been invited to stop performing and start sensing. That is psychology and hospitality. It is not oenology by geology.

The name Aum is itself a word about connection. The farming remains organically tended soil and dry-farmed roots. If you come only for crystals, you will still be handed a serious glass.
