Why Small-Production Napa Wine Costs What It Does

Affordable organic wine is a value question, not a hunt for the cheapest capsule. Aum Cellars does not claim to be inexpensive Napa wine. What you can say from the public site is narrower: these are small lots, organically farmed and dry-farmed on Hoffmann ground (and a few sourced reserves), made by a winemaker who still walks the rows, and sold direct from the shop or, for allocation Cabernets, the wine club. Current prices live on those pages. They are not printed here, because they change.
What a small-lot Napa bottle is paying for
Farming first. Pete is winemaker and viticulturist. The vineyard describes organic practice, dry farming where conditions allow, cover crops, compost, and sheep in the dormant rows — hands-on work, not a remote recipe. Limited yields are part of that system. Estate fruit is grown on Hoffmann ground in Coombsville, Atlas Peak, Calistoga, and Mt. George. Some wines buy fruit (Russian River Pinot, Sierra Foothills Grenache) and the shop says so — sourcing is a cost too. In the cellar the published habit is native yeast, unfined and unfiltered wine, small lots rather than a national grocery set.
Selling direct is the other half. There is no third-party club on this site marking up someone else’s story. You buy from the estate cart, or you join an allotment. That cuts middlemen. It does not make the farming cheap. Allocation Cabernets are tiny lots on purpose; they are not a discount bin.
Value is waste, not a unit price
The expensive bottle is still the one you do not finish. A tasting before a case — or a three-bottle set you will actually drink — is how people keep from funding a rack of regrets. Is it worth buying organic wine is the buyer’s question: these sites, this cellar, this relationship. This page is the cost question. Neither page will tell you Aum is a bargain against unnamed neighbors.
